At Togiya, we offer private and small-group lessons to teach the fundamentals of knife sharpening.
Even if you’ve never sharpened a knife before, our courses are designed so you can learn confidently — at your own pace.
Course Levels

Beginner / Foundation Course
Who it’s for: First-time sharpeners or those unsure how to grind their knife so it becomes sharp.
Knife types: Western-style kitchen knives (e.g., santoku, gyuto, nakiri knives)
Duration: 90 minutes
Fee: ¥3,300 (tax included)
What to bring: Your knife, a whetstone (if you have one; otherwise we can supply), and clothes you don’t mind getting dirty.

Intermediate Course
Who it’s for: Those who have already completed the Beginner course.
Knife types: Same types as above (western-style kitchen knives)
Duration: 90 minutes
Fee: ¥3,300 (tax included)

Advanced Course
Who it’s for: Those who have completed Intermediate and want to learn sharpening techniques for more challenging conditions (e.g. repairing chips, fixing blade warp).
Knife types: Western-style kitchen knives (santoku, gyuto, vegetable knives)
Duration: 120 minutes
Fee: ¥5,500 (tax included)

Traditional Japanese-Style Single-edged knife Course
(Deba and Yanagiba)
Who it’s for: Those who have completed the Intermediate course and wish to learn to sharpen single-bevel Japanese knives (e.g. deba, yanagiba).
Knife types: Japanese knives (deba, yanagiba)
Duration: 120 minutes
Fee: ¥5,500

Online Classes
If you cannot visit in person — for example, because you live far away — we also offer online video-based classes. We explain the basics of proper knife sharpening in an easy-to-understand manner. By learning and practicing repeatedly, you can keep your knives sharp and enjoy cooking for a long time.
